Named for Legal Sea Foods founder (and Roger's father) George, this classic side pairs perfectly with fried fish!
Cole slaw has been a staple on the menu since the start of Roger's restaurant days. It's usually served with fried fish, but could accompany any main course.
5 cups shredded green cabbage
3 cups shredded red cabbage
⅓ to ½ cup shredded onion (about 1 medium)
1½ cups shredded carrots
¼ cup shredded green pepper
1 to 1¼ cups mayonnaise
¾ cup sour cream or light sour cream, or ½ cup sour cream and ⅓ cup yogurt
Pour boiling water over the green cabbage and let sit for 5 minutes. Drain and press dry. Toss with the red cabbage, onion, carrots, and pepper. Add the mayonnaise and sour cream. Add salt to taste.From the "Legal Sea Foods Cookbook" by Roger Berkowitz and Jane Doerfer, illustrated by Edward Koren.
