    Great taste! Not clean enough.

    "The char had a mild, delicious flavor and a perfect, flaky texture when cooked. What we did not like was the residual inner skin and mushy fat on the bottom. Our guests were literally scraping off the bottom and one side of the fish and every plate was left with a pile. It was embarrassing. We bought skinless boneless, as we always do, so that we can just enjoy the fish directly out of the oven. We should not need to skin and defat the fillets."
